The substack (psuedo-)moralist likes their steak too much. (For me, when I began looking into it, the passion people have for eating meat was a point in favor of veganism. I expected this to mislead people's beliefs and practices.)
A lot of smart people also write pages and pages about why there are innocent children and animals being killed for no reason presumably when there is an all powerful, wholly moral and all knowing God. I have a harder time explaining that. But it all comes down to a version of "you can't handle the truth!" (Enter Jack Nicholson dot gif.)

To your subhead, the more important question, IMO, is: Why does nearly everyone who goes vegan go back to eating animals?
Because they can’t handle the truth. (Right, @Dan Williams ?) Seriously though, it’s easy to explain why people object so strenuously to veganism.
